Justin Knoth, General Manager

Justin leverages a wealth of experience managing Bay Area restaurants in his role as Tratto's General Manager. Through an easy demeanor and passion for hospitality, Justin sets the tone for the restaurant's welcoming and lively atmosphere. Justin's commitment to creating a dynamic cultural dining experience  one that is quintessentially San Franciscan  translates to his talented staff, who look for every opportunity to delight Tratto guests. 


Robert Birnschein, Chef De Cuisine

With 17 years of experience cooking in a wide range of establishments from casual to fine dining, Chef Birnschein's mission has always been to provide a memorable dining experience for guests to delight in. Influenced by a mix of California and Italian cuisine, he continues to elevate Tratto's menu, featuring house-made pasta and sausages, pizza, seasonal vegetables and slow-cooked meats. Prior to Tratto, he extended his skills to Lions Gate Hotel, Eight American Bistro and the Winchester Country Club.

Cynthia Tran, Beverage Director

Cynthia brings a high level of energy and creativity to Tratto's robust bar program. Guests are invited to enjoy traditional Italian cocktails “with a twist,” as well as bottled cocktails, Italian cream sodas, and a housemade limoncello program. Also featured are carefully selected  West Coast and Italian beers and a curated program of wines from Italy and California, some of which are available on tap, and by the "jug."
