Meet Chef Gian Marco Cosmi

Chef Cosmi brings the spirit of Northern Italy to Tratto with a cuisine rooted in tradition, simplicity, and seasonality. Trained at ALMA in Parma, he draws from the flavors of Emilia-Romagna, shaping a style that is soulful, restrained, and deeply personal. His cooking has earned widespread acclaim—from San Francisco Magazine to Gambero Rosso—for its honest approach, house-made pastas, and elegant balance that lets great ingredients speak for themselves.

At Tratto, guests are invited to experience Chef Cosmi’s cooking as it’s meant to be enjoyed—shared around the table, guided by the seasons, and grounded in the comfort of a neighborhood trattoria.
